Saving works just fine here on my 8245 with FlashFloppy firmware.
On a 720k image at least...
Perhaps the problem is the USB thumb drive ?

What usb drive model you are using? What fat system is used - 16 or 32? What is the size of the drive?

One is a old Kingston 1GB:

# file -s /dev/sdb1
/dev/sdb1: DOS/MBR boot sector, code offset 0x58+2, OEM-ID "MSDOS5.0", sectors/cluster 8, reserved sectors 4278, Media descriptor 0xf8, sectors/track 63, heads 255, hidden sectors 128, sectors 2011136 (volumes > 32 MB) , FAT (32 bit), sectors/FAT 1957, reserved 0x1, serial number 0x2c35808b, unlabeled

and the other some unlabeled 4GB drive that I once got from HP as a promotion:

# file -s /dev/sdb1
/dev/sdb1: DOS/MBR boot sector, code offset 0x58+2, OEM-ID "mkfs.fat", sectors/cluster 8, Media descriptor 0xf8, sectors/track 62, heads 124, hidden sectors 2048, sectors 7829504 (volumes > 32 MB) , FAT (32 bit), sectors/FAT 7632, reserved 0x1, serial number 0xf2085c54, label: "GOTEK8245 "

Strange. I am also using a FAT32-formatted USB stick and the latest firmware v0.9.8a. Still can't save anything into the image. Did the USB cable flashing, then reloader flashing, then firmware flashing. No idea what's wrong...

Did you change the default FF.CFG?

I also flashed it with a usb-a to usb-a cable, the ff.cfg was not changed.
I don't remember which version I flashed, but it certainly wasn't 0.9.8a as it was just released. Looking at the dates I think it was 0.9.5a, so maybe downgrading is worth a shot ?

Also perhaps your image has the readonly attribute set ?

Nope, read-only is not set. Will try to downgrade and check again. Another weird thing is that my Gotek can't be disassembled. None of the 3 screws can be removed.

That's weird. I have two (from aliexpress) and both can be disassembled. Both have normal screws.

I have two of these.
But keep in mind it's Chinese newyear currently so orders might take a bit longer.

Yep, I have the same one from AliExpress:

https://www.ebay.com/itm/5V-DC-SFR1M44-U100K-USB-Floppy-Driv...

Just testing now and it's read-only with the latest firmware. Need to try with another firmware/usb drive. How did you set the jumpers? I set only one jumper on DS0. The device came without the manual, the downloaded manual is crap.

UPDATE: Same problem with different images and different USB sticks. Shugart or IBMPC mode - no difference...

UPDATE1: Downgraded firmware to 0.9.7a and the problem is now gone. So the latest firmware is buggy! I created a bug report on Github.
