I recently saw the C64 Ping-Pong, but it's almost identical to the MSX version. The only thing I was missing was the penguin in the crowd...

Many MSX games have been converted from the MSX(1) to the Colecovision, and it is basically just a controller hack, *but* they require a RAM and audio booster that plugs into the CV's expansion port like the "Super Game Module". If anyone is familiar with this, I am wondering if ZX Spectrum games could be as easily controller hacked to the Colecovision using the same booster or would need their own specific booster module.

Very specific booster, Coleco has a VDP compatible with MSX, while Spectrum doesn't, you would need the VDP as well VRAM for it and use the booster video output... Probably not cost feasible, should be a fun thing to see however...

Most conversions from ZX to MSX use direct hardware access.
Some use 64 Kb also.
It is doable, but not easy.
