As soon as I change anything in the "hidden" settings.xml and start openMSX, all settings are reset. Hmm.

You don't need to edit that file. After adding the binds, just do save_settings in the console or, usually, it will happen automatically as save_settings_on_exit is enabled.

Yes, and then you save your settings when you're happy with them.
