Amiga people have the same problem, but it looks like they are testing a new product to bring back their original color. Take a look to:

About preventing them become yellow, I actually don't know the way. I think it has something to do with how much your keyboard is exposed to oxygen.

"oxygen" ... it could be .. but .. it's strange that always the same keys gets a yellow color... I had 2 keyboards (no yellow colors) .. because i had to move i put the keyboards in a box , darke inside .. after a year (mostly) i took the keyboards out of the box and .... and .. thay are also having these yellow colors .. strange isn't it ? The only thing i can explain is that during this year the keyboards where in a garage .. maybe moisture .. ?!

Cool document.. verry useful .. some text from above link..

Prevention Methods:
Apply a coat of UV protectant to all plastic surfaces on your console or computer.
Keep your most prized collector pieces out of rooms with fluorescent lighting.
Keep your units away from windows and sunlight because, like the fluorescent lighting, the UV exposure will drastically hasten their discoloration. Even indirect sunlight can do damage over time.
Avoid placing your unit next to a heat source such as a radiator, air duct, or fireplace. Or in the fire.
Keep your consoles and computers out of the attic. The repetitive, long-term cycles of extreme heat and extreme cool in most attics drastically speeds the degradation and breakdown of all plastics and rubbers. The heat does most of the damage, though.
Do not keep your machines in a room where people smoke tobacco (wacky or otherwise). This doesn’t directly relate to internal chemical yellowing, but it can cause your console or computer to yellow for other reasons!
Try not to breathe too heavily upon your console’s exterior.
Ok — this one’s a joke.
For the ultimate in protection, seal your unit in a lead-lined, temperature-controlled, evacuated vault away from any radiation, visible or otherwise. But hey, what fun is that?

For pars small as the single keys you don't need retrobrite.
Just put the parts in a high concentration peroxide bath exposed to UV rays (or sunlight).

Before I do put the computer in a box to store it, I do wrap it with those thin PVC bags any supermarket gives you to put your groceries. I don't know why, but it just prevents the computer from turning yellow.

But note that will not revert the effects of a already yellowed computer.
